Our Distillery

Our process begins on the highest points of our island - The Paps.  Here, pure rain water and snowmelt filter through ancient rock, before flowing down into Market Loch below. From there, it winds its way to the distillery via natural streams and waterfalls, shaping the soft, clean water that helps gives Jura its distinctive character.

Our exceptionally tall stills are some of the tallest in Scotland. When people inevitably ask us why they are so big, we tell them the simple truth – they were the biggest we could fit on the boat over to Jura.

These stills are at the heart of producing our complex new make spirit. The height, combined with their wide shape, increases copper contact during distillation, helping to create a fruity, aromatic spirit. 

At Jura we have access to hundreds of different cask types to choose from. However, what works well for one spirit style may not work with another. Therefore, every recipe we create and every cask we select follows the same principle: does it highlight key elements of our complex island spirit.

At our beachside distillery nestled  amongst our Scottish island community, each of these different elements come together to create a whisky that is fruity, balanced and perfect for bringing people together.
